It&#8217;s rich and buttery, and all you have to do is press it into the bottom of your baking pan. No complicated crimping of edges required!<\/p>\n\n\n\n<p>Once you&#8217;ve prepared and baked the crust, simply whisk together the pumpkin pie mixture, pour it on top, and bake.<\/p>\n\n\n\n<p>The hardest part of making this recipe is really just waiting for the bars to cool and chill before digging in. Just be sure to <a href=\"https:\/\/www.livewellbakeoften.com\/how-to-measure-flour\/\">measure your flour correctly<\/a> by spooning it into your measuring cup and leveling it off with the back of a knife.<\/li>\n\n\n\n<li><strong>Butter: <\/strong>I recommend sticking with unsalted butter so you can control the amount of salt. If you only have salted butter on hand, just omit the salt from the crust.<\/li>\n\n\n\n<li><strong>Sugar: <\/strong>Granulated sugar adds some sweetness to the shortbread crust, while brown sugar adds flavor to the filling.<\/li>\n\n\n\n<li><strong>Spices: <\/strong>There&#8217;s a blend of ground cinnamon, ginger, nutmeg, and cloves in this recipe. If you only have <a href=\"https:\/\/www.livewellbakeoften.com\/homemade-pumpkin-pie-spice\/\">pumpkin pie spice<\/a> on hand, feel free to substitute all of the spices with 2 to 2 \u00bd teaspoons of pumpkin pie spice.<\/li>\n\n\n\n<li><strong>Eggs: <\/strong>These add structure and help the filling set up properly. It&#8217;s also best to use room temperature eggs so they mix together more evenly with the other ingredients. If you need to bring them to room temperature quickly, just place the eggs in a bowl of warm water for 5 to 10 minutes.<\/li>\n\n\n\n<li><strong>Pumpkin Puree: <\/strong>Not to be confused with canned pumpkin pie filling, which already contains sugar and spices. If you can&#8217;t find any, an equal amount of half and half would be the best substitute.
