Specifically, homemade ice cream.<\/p>\n\n\n\n<p>Since I shared my favorite <a href=\"https:\/\/www.livewellbakeoften.com\/no-churn-ice-cream\/\">no-churn ice cream<\/a> with you last week, it only seemed fitting to show you a fun way to use that recipe. Enter: this homemade ice cream cake!<\/p>\n\n\n\n<p>Yes, you read that right! This recipe is completely homemade, but don&#8217;t let that scare you. It&#8217;s actually pretty easy to put together and makes for an impressive dessert, especially during the warmer summer months.<\/p>\n\n\n\n<p>This ice cream cake is perfect for birthday parties, but it&#8217;s also fantastic for a variety of different occasions. Let&#8217;s quickly cover a few key ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Sweetened Condensed Milk: <\/strong>Be sure to use sweetened condensed milk and not evaporated milk by accident. It&#8217;s easy to mix up these two ingredients and I can assure you they do not work the same.<\/li>\n\n\n\n<li><strong>Heavy Whipping Cream: <\/strong>Make sure to use heavy whipping cream that has at least 36% milkfat. You will also need two pints &#8211; one for the ice cream and one for the frosting.<\/li>\n\n\n\n<li><strong>Buttermilk: <\/strong>This is used in the chocolate cake layers and helps to create a soft, tender crumb. If you don&#8217;t have any on hand, feel free to use my <a href=\"https:\/\/www.livewellbakeoften.com\/how-to-make-buttermilk\/\">homemade buttermilk substitute<\/a> instead.<\/li>\n\n\n\n<li><strong>Vanilla Extract: <\/strong>You will be using vanilla extract in the ice cream, cake layers, and frosting. I highly recommend sticking with pure vanilla extract or even vanilla bean paste. Avoid imitation vanilla because it won&#8217;t taste nearly as good.<\/li>\n\n\n\n<li><strong>Espresso Powder: <\/strong>While this is optional, I do recommend using it in the chocolate cake because it enhances the flavor of the chocolate. My personal favorite brands are Dellalo or Medaglia d&#8217;Oro. Then, whisk in the granulated sugar and brown sugar.<\/li>\n\n\n\n<li><strong>Whisk in the wet ingredients: <\/strong>Add the oil, buttermilk, eggs, and vanilla extract and mix until just combined. Feel free to use <a href=\"https:\/\/www.livewellbakeoften.com\/how-to-make-stabilized-whipped-cream\/\">stabilized whipped cream<\/a> if you prefer, but I don&#8217;t find the extra step necessary. Regular whipped cream will hold up and freeze just fine!<\/li>\n\n\n\n<li><strong>Level and stack the cake layers: <\/strong>You can use either a knife or cake leveler (I really love this <a href=\"https:\/\/rstyle.me\/+aibJZgrZKzPvMOaJdFlJ7w\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">cake leveler<\/a> from Wilton). Add a little whipped cream to the center of the surface that you will be assembling your cake on. However, it can be prepared up to one week in advance and stored in the freezer.<\/p>\n\n\n\n<p>If you plan on making this a few days in advance, it&#8217;s best to cover it so it stays fresh.
