So, I decided to switch gears and work on a recipe for this classic cake. Because let&#8217;s be honest, who doesn&#8217;t love a banana cake that&#8217;s amplified with even MORE flavor!<\/p>\n<p>If you&#8217;ve never heard of a hummingbird cake, it&#8217;s essentially a spiced banana cake filled with chopped nuts and crushed pineapple. It&#8217;s also topped off with cream cheese frosting, which really takes it to the next level.&nbsp;<\/p>\n<p>And yes, it&#8217;s every bit as delicious as it sounds! Here&#8217;s what you&#8217;ll need to make this classic cake:&nbsp;<\/p>\n<ul>\n<li><strong>Pecans:&nbsp;<\/strong>Buy raw, unsalted pecans and toast them before mixing them into the batter.&nbsp;<\/li>\n<li><strong>Flour:<\/strong> As always, make sure you spoon and level your flou<span style=\"color: #000000;\">r. Since this cake is made with bananas, it has a denser texture and you don&#8217;t want too much flour in the batter otherwise it can weigh it down.<\/span><\/li>\n<li><strong>Baking Soda:<\/strong> There&#8217;s one teaspoon of baking soda in this cake and it provides the perfect rise!<\/li>\n<li><strong>Spices &amp; Salt:<\/strong> This cake is spiced with some ground cinnamon and nutmeg, which both compliment the banana flavor perfectly.<\/li>\n<li><strong>Oil:<\/strong> You can use either canola, vegetable, or even melted coconut oil.<\/li>\n<li><strong>Mashed Banana:<\/strong> There are two cups of mashed banana<span style=\"color: #000000;\"> providing tons of banana flavor! <\/span>The bananas along with the oil help to keep t<span style=\"color: #333333;\">his cake incredibly moist.<\/span><\/li>\n<li><strong>Sugar:<\/strong> I use a mix of brown sugar and granulated sugar, the brown sugar provides more flavor and moisture.<\/li>\n<li><strong>Crushed Pineapple:<\/strong> This is a staple in hummingbird cake and it provides a lovely tropical flavor. Just make sure to drain the can of crushed pineapple before whisking it into the wet ingredients.<\/li>\n<li><strong>Eggs &amp; Vanilla Extract:&nbsp;<\/strong>There are three large eggs, which add structure. I prefer to do this step first, so while the nuts are cooling I can prep the cake batter. I use one cup of chopped pecans in this cake, but I toast one and a half cups so I have some extra&nbsp;to decorate the cake with too.<\/p>\n<p>Then, just pour the cake batter evenly between two 9-inch cake pans and bake them for about 35 minutes. If you want to make it easier to get the cakes out of your cake pans, I highly recommend lining the pans with some parchment paper. I use <a href=\"https:\/\/rstyle.me\/+ysC0wMGeOY572KEmxMFh4w\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">pre-cut round parchment sheets<\/a> and they work perfectly!<\/p>\n<p>Once the hummingbird cake layers are cooled, level them, and assemble the cake. Hummingbird cakes are traditionally topped with cream cheese frosting, so I used my <a href=\"https:\/\/www.livewellbakeoften.com\/cream-cheese-frosting-recipe\/\">homemade recipe here<\/a>. If you want a light layer of frosting, you can&nbsp;use the original recipe<span style=\"color: #333333;\"> as is<\/span>. I wanted a thicker layer so I increased the recipe by one and a half.<\/p>\n<h2>FAQ&#8217;s<\/h2>\n<h3>How do you toast pecans or walnuts?&nbsp;<\/h3>\n<p>Preheat your oven to 350\u00b0F (177\u00b0C). Spread the pecans or walnuts on a baking sheet lined with parchment paper. Once the oven is preheated, place the baking sheet with the nuts in the oven and bake them for about 8 to 10 minutes stirring once or twice as they&#8217;re baking.<\/p>\n<h3>Do you have to refrigerate this cake?<\/h3>\n<p>Yes, since this easy hummingbird cake is topped with cream cheese frosting it is best to refrigerate it. You can store the cake in an airtight container in the refrigerator for up to 5 days. If you do toast the pecans, I suggest doing this step first and letting them cool as you make the batter.<\/li>\n<li>When measuring your flour, make sure to stir the flour around in the container, spoon it into your measuring cup, and level it off with the back of a knife.<\/li>\n<li>You&#8217;ll need 2 cups of mashed bananas,&nbsp;which is equal to 4 large bananas or 5 to 6 medium bananas. The riper the bananas, the better!<\/li>\n<li>Make sure to drain the crushed pineapple before adding it to the wet ingredients.<\/li>\n<li>Be sure to use blocks\/bricks of cream cheese for the
