So today, I&#8217;m bringing you these easy pumpkin streusel muffins.<\/p>\n<p>These muffins are so simple to throw together and only take about 20 to 25 minutes to bake. Here&#8217;s what you&#8217;ll need to make it:&nbsp;<\/p>\n<ul>\n<li><strong>All-purpose flour:&nbsp;<\/strong>When measuring your flour, don\u2019t scoop it out of the container with the measuring cup. Instead, stir the flour around, spoon it into your measuring cup, and level it off with the back of a knife.<\/li>\n<li><strong>Cinnamon &amp; pumpkin pie spice:&nbsp;<\/strong>To make this recipe a bit easier, I just used pumpkin pie spice and some ground cinnamon. If you don&#8217;t have any pumpkin pie spice on hand, then you can use my <a href=\"http:\/\/www.livewellbakeoften.com\/homemade-pumpkin-pie-spice\/\">homemade recipe here<\/a>. I&#8217;ve used it in these muffins and quite a few other recipes and it tastes wonderful!<\/li>\n<li><strong>Salt:&nbsp;<\/strong>Balances out the sweetness of the batter.&nbsp;<\/li>\n<li><strong>Butter:&nbsp;<\/strong>I typically use unsalted butter, but salted butter will work fine too.<\/li>\n<li><strong>Baking powder &amp; baking soda:&nbsp;<\/strong>Helps the muffins rise in the oven.&nbsp;<\/li>\n<li><strong>Pumpkin puree:&nbsp;<\/strong>Make sure to use pumpkin puree in these muffins and not pumpkin pie filling. Pumpkin puree will have pumpkin listed as the only ingredient on the back of the can.<\/li>\n<li><strong>Oil:&nbsp;<\/strong>Canola, vegetable, or melted coconut oil will work.&nbsp;<\/li>\n<li><strong>Granulated sugar &amp; Brown:&nbsp;<\/strong>Sweetens the batter. To make it easier to cut the butter into the dry ingredients, I like to use a pastry cutter. You can usually find pastry blenders\/cutters for just a few dollars and they&#8217;re perfect for making <a href=\"http:\/\/www.livewellbakeoften.com\/homemade-pie-crust\/\">homemade pie crust<\/a> too. If you don&#8217;t have one, then a fork or even your hands will work just fine.<\/p>\n<p>The pumpkin muffin batter is incredibly simple to mix together as well. You&#8217;ll start by whisking together the flour, baking powder, baking soda, spices, and salt.&nbsp;For the wet ingredients, whisk together your oil, brown sugar, granulated sugar, eggs, pumpkin puree, and vanilla extract until fully combined.&nbsp;<\/p>\n<p>Once you&#8217;ve prepared the wet and dry ingredients, you&#8217;ll combine them and scoop the batter into the cavities of your muffin pan.&nbsp;Once you&#8217;ve added the batter to your muffin pan, just take the crumb topping out of the refrigerator, sprinkle it on top, then pop the muffins into the oven.<\/p>\n<p>Once they&#8217;ve cooled, you can top these muffins with a simple vanilla glaze or leave it off.
